Maftoul is a traditional Palestinian grain, similar to cous-cous, and made from bulgar and whole wheat flour. Its distinctly nutty flavour makes it a brilliant alternative to more ordinary grains. The women follow in the same traditions as their grandmothers, working together to crack, hand-roll, and dry the wheat under the bright Palestinian sun.
Zaytoun's organic maftoul is amazingly easy to prepare, too. Simply rinse the maftoul in cold water, and then steam for 20 minutes or add 400ml of stock or water, bring to the boil and let simmer for 12-15 minutes.
